The Platter
One smoked chicken breast sliced
200g smoked salmon
one tub of smoked salmon pate
one packet of smoked eggs
200g smoked duck breast
Add dried cranberries or fresh apple slices and parsley or lettuce to garnish.
Spread the pate on the smoked salmon (see salmon and cucumber)
Roll half a slice of duck around a dried cranberry or slice of fresh apple.
Slice the chicken and cut the eggs.
Arrange on a platter and serve with mayonnaise sprinkled with paprika.

Game sausage casserole with smoked cheese mash
Brown a sliced onion andthe round of game sausage and add to a casserole pan.
Add beef stock, red wine and cook for half an hour, then thicken the liquid to form a gravy.
Mash the boiled potatoes and add grated cheesse just before serving.

One pot Kedgeree
(Allan's alternative to the pot noodle)
To a heavy saucepan add half a cup of rice, one and a half cups of water and simmer gently until the rice is nearly cooked (about 10 minutes).
Add diced, skinned smoked haddock to the rice and stir gently.
Cut 4 smoked eggs into quarters and fold gently into the mixture.
Add a knob of butter and double cream, black pepper and salt to taste.
Serve in a bowl in front of a roaring fire.

Lobster Bash
For two people you will need three cooked lobsters, split in half and empty the shells.
Arrange four half shells in an oven proof dish.
In a pan, gently brown a small chopped onion and two cloves of garlic in a generous knowb of butter.
Chop all the lobster meat and add to the browned onion with a handful of grated smoked cheddar.
Return to the heat and add double cream, warm gently until the cheese is melted.
Spoon the mixture into the half shells, sprinkle with breadcrumbs and a little more cheese then grill to form a cruchy topping.

Special Paella
Prepare the paella rice as normal and then add liced smoked chicken, smoked mussels, shredded smoked bacon, smoked haddock, saffron and a browned onion.

Smoked Salmon and Pate with Cucumber or Asparagus
Spread a thin layer of pate on a slice of smoked salmon.
Place a long, thin stick of cucumber (or piece of blanched asparagus) near one edge and roll into a roulade shape.
Slice into bite size chunks and serve.
