Portion Guide
When buying smoked salmon for a first course we recommend 125g for two people and 250g for four if you are buying packets of slices.
When buying a side of salmon or seatrout, allowance needs to be made for the weight of the skin and some of the meat that is unsuitable for serving as slices. We would suggest you allow 75g per person from a trimmed and sliced side and about 80g per person from an unsliced side.
We can supply sides of salmon up to about 2 kilogrammes in weight so please contact us at the smokehouse if you require any size greater that those shown.
